Beer Can Turkey Chili

2 T | Olive Oil |
1 | Yellow Onion, chopped |
2 | Celery Stalks, chopped |
1 | Garlic Clove, minced |
1 | Jalapeno, minced |
2 T | Cock-a-Doodle Brew Rub |
1 T | Chili Powder` |
1 T | Corander, ground |
1 T | Cumin, ground |
1/2 T | Oregano, dried |
24 oz. | Beer |
28 oz. | Fire Roasted Tomatoes |
15 oz. | Black Beans, drained |
15 oz. | Pinto Beans, drained |
1 1/2 lbs. | Beer Can Turkey Breast, sliced thinly |
Instructions:
- Heat olive oil in a deep pot or Dutch oven over medium heat, then sauté the onion and celery for 3 minutes. Add the garlic and jalapeño and continue to sauté until garlic is fragrant. Add the Cock-A-Doodle Brew, chili powder, coriander, cumin, and dried oregano, then stir to combine.
- Pour all the beer into the pot, scraping any brown bits from the bottom. Stir in the tomatoes, black beans, pinto beans, and turkey. Bring to a simmer, then partially cover and continue to simmer for 1 hour.
- Remove from the heat, then serve Beer Can Turkey Chili warm.
Slow-cooker method: Follow instructions through adding beer, then carefully transfer to a slow-cooker. Stir in remaining ingredients, then cook on high for 2 to 3 hours, or on low for 4 to 6 hours.
