Ingredients
- 1 LB – Bacon, not thick cut
- 8 – Jalapenos
- 8 oz – Cream Cheese, softened
- 4 oz – Sour Cream
- 2 oz – Cotija Cheese, crumbled

3 TB – Elote Loco Street Corn Blend
- ¾ Cup - Corn
Directions
Preheat your smoker or oven to 300 degrees F.
- In a mixing bowl, fold together the softened cream cheese, sour cream, cotija cheese and Elote Loco.
- Once well mixed, fold in the corn until well incorporated.
- Cut the jalapenos in ½ lengthwise and remove the seeds.
- Stuff the ½ jalapenos with the cream cheese mixture.
- Wrape each popper in a spiral with one slice of bacon.
- Season again with a sprinkle of Elote Loco
- Place the poppers on a rack and onto the smoker. If using the oven, place on a rack lined tray.
- Cook for 30-40 minutes until the bacon is rendered to you liking.
- Rest 5 minutes before serving.
- Enjoy!
