PS 100 Smoker
I ordered the PS 100 and a bunch of other items as well. When my order arrived, I unboxed it all to find out I had been sent a used smoker!! to say the least I was pretty upset. I immediately called them and spoke to someone about it, and since I live pretty close to their warehouse, they were willing to have someone drive the new one to my house (and they did send me an accessory bundle and stand for the trouble). I haven't tried the Wi-Fi yet to see if I'll have the same issues some seem to. After all that I am pretty happy with the smoker so far. I've done some snack sticks, jerky, wings and few other things and all have turned out good. Overall, I am happy with the smoker, once I got the one I paid for.
Great smoker.
This smoker is very well made. I was impressed with the quality of the cabinet and parts. The only problem is the wi fi quit working after the first use. We contacted your company and got a really nice lady that knew just what the problem was. It seems like there were some faulty circuit boards used. She shipped us a new circuit board that will be here today and I’m sure that will solve the problem. I would recommend this smoker and your company to anyone. There is a little bit of a learning curve , but that’s the fun part. It definitely has the capability to make a much better product than my old propane smoker.
Smoker
I bought my Pro Classic last fall to replace my propane smoker. It is very well built and easy to move around. I have smoked a wide variety of stuff including ribs, bacon, polish, bologna, summer sausage and salmon. I live in Minnesota and today the temp was only 12 degrees. I smoked a 10 pound batch of smoked roasted sausage and the smoker came through again. I did have to set it about 5 degrees hotter to get my target temps because of the cold. I am going to run it overnight to do a batch of German Salami. The instructions are to run at 100 but I set my smoker at 120 as it is going to get colder tonight. One small negative is that the control knob is extremely touchy and the temp jumps around. You have to turn it very slowly. I checked the temp probe against another certified thermometer I have and it was spot on. I would buy more probes if they were cheaper or if there was free freight. So far I really like this smoker.

FAQs
Do I need to season my smoker?
Yes, we recommend seasoning your smoker before first use. You can reference your user manual or our burn-off video for instructions, or follow these steps:
- Set controller to Smoke and set to 100°F.
- Fill sawdust pan about 3/4 full with sawdust
- Moisten the sawdust and funnel the sawdust to the outside of the pan (about 6 cups sawdust and 4 cups water)
- Increase the temperature to 150°F.
- Open damper 1/2 open during the break-in period.
- After 3 hours, turn the temperature control off.
- Once smoker has cooled completely, the smokehouse is now ready for use.
What is cook mode and smoke mode?
Smoke mode:
Temp Range: 80°-180°F |Burner Wattage: 725W
This is the recommended setting when using a sawdust pan for smoke production. A lower wattage output from the burner reduces the chance for burning sawdust and produces a more controlled stable smoke cycle.
*When smoking at lower temperatures, we recommend building a smolder on the sawdust at 130°F then reducing the temperature of your smoker as needed to the preferred target range
Cook Mode:
Temp Range: 80°-300°F | Burner Wattage: 1450W
This is the recommended setting for cooking product above 180°F. It can also be used to hold lower temps without a sawdust pan and may come in handy when smoking in colder climates as the higher wattage burner setting will produce more radiant heat within the smoker.
*We do not recommend this setting with the use of our sawdust pan
Can I use Pellets?
No, pellets may not be used in your Pro Smoker Home Smokehouse. Using pure sawdust or fine wood chips will result in a more authentic smoke flavor while avoiding any potential fires from catching like when using pellets.
