Bacon Cheeseburger Bratwurst

For 25 Lb. Meat Batch |
25 Lbs. | Pork Trimmings |
1 Package - B Unit | No. 680 Bacon Cheeseburger Bratwurst Seasoning |
2.5 Lbs. | Smoked Bacon Ends & Pieces, Ground |
1.25 Lbs. | Chopped Onion |
1.5 Lbs. | High-Temp Cheddar Cheese |
.75 Lbs. | Potato Starch |
2 cups | Distilled Water |
1 Package | 32-35MM Natural Hog Casings |
Instructions:
1) Grind pork through 5/32" plate, twice.2) Add water, seasoning & potato starch; mix well.
3) Add ground bacon, onion and cheese; mix until thoroughly blended.
4) Stuff into 32-35mm hog casings.
5) Store and refrigerate overnight before grilling or cooking.
Tip: Seal in vacuum bags for storage in freezer.

I just received your spice packs and hi temp cheese. Thanks so much. We will be building this sausage this coming weekend. I’m smoking them to 155f. Fresh is good and we will keep some fresh. I’ll let you know how it turned out. I’m from Alberta and my southern friends love it fresh and I want to try some smokes. Wish me luck. Lol
