- 4 – Chicken Leg Quarters

¼ C – BBQ General SPG Rub

½ C – Apricot Preserves

½ C – Thai Fighter
Directions
- Clean and trim the chicken 1/4s as needed and then season generously with BBQ General.
- Preheat smoker to 350 degrees.
- Place the chicken on the smoker and cook until the internal temp reaches 167 at the joint.
- While the chicken is cooking, combine the apricot preserves and Thai Fighter in a sauce pot.
- Place over low heat and bring to a simmer, stirring often.
- Baste the chicken on both sides with the sauce and cook an additional 10 minutes.
- Rest 10 minutes and serve!
