Ingredients

10 Eggs

1/2 Lb Bacon - Large Dice

1/2 Lb Breakfast Sausage- Pre-cooked, Large Dice

1 Onion- Julienned

4 Oz Cheddar Shredded

4 Oz Monterrey Jack Cheese- Shredded

2 T Bacon Bomb Jalapeño Hickory

1/2 Cup Black Beans- Drained and Rinsed

1/2 Cup Tomatoes- Diced

1 Avocado
Directions
Pre-heat oven to 350 degrees.
Over medium high heat, in 1 TB of oil, sauté the peppers and onions until tender and translucent. Set aside.
Over medium high heat, in a sauté pan, cook the bacon until most of the fat is rendered. Then add the sausage and brown slightly. Remove meat and set aside. Pour out the grease, but do not scrape or wipe out the pan. Use the remaining fat to cook the eggs.
Whisk eggs until membranes are broken. Over medium heat and in the remaining bacon fat, scramble the eggs and season with Bacon Bomb Seasoning.
On a baking sheet, lay out the tortillas. Distribute and spread the cheese out over the 4 tortillas. Down the center of each tortilla arrange the eggs, peppers, onions, bacon, sausage, and beans. Place them in the oven for 5-10 minutes or until the cheese is melted.
Once out of the oven, add the tomatoes and sliced avocado to the tortillas. (and more bacon bomb if desired)
Fold the tortillas into burritos and cut in half.
Serve with sour cream or more bacon.
