Ingredients
- 10 LB – Beef Chuck

200g – Bacon Cheeseburger Brat Seasoning
- 4 LB – Bacon, Thick Cut

1 LB – High Temp Cheddar Cheese
- 4 oz – Red Onion, Diced
- 4 oz – Ketchup
- 10 oz – Distilled Water

Directions
- Roughly chop the bacon and place in a stock pot.
- Place over medium heat to render the bacon until crispy.
- Drain off bacon and place in the fridge to cool completely before mixing into the meatblock.
- Set your grinder parts in the fridge for 45 minutes before grinding.
- Cut the beef in to 3-4” cubes. Lay flat on a tray and place in the freezer for 20-30 minutes before grinding.
- Set your grinder up with a 3/8” plate. Grind the meat once.
- Reset with a 3/16” plate and grind one more time.
- Place the ground meat into a meat lug and add the seasoning and water. Mix 3 minutes.
- Add bacon, ketchup and diced red onion. Mixa again for 4-6 minutes until the meat become very tacky.
- Add in high temp cheddar cheese and mix until just incorporated.
- Load stuffer and stuff the meat into casings.
- Link up every 6-7” and place in the fridge overnight to set.
- Cut apart the links and store!
