Bacon-Wrapped Chicken Taquitos

Imagine your favorite crunchy taco treat made better with bacon. We took a gooey, cheesy chicken taquito and wrapped it with bacon for a decadent and unique snack.
Ingredients
- 1 ½ LB – Chicken Breasts
- 1 TB – Olive Oil

3 TB – El Jefe Taco Rub
- 2 Cup – Pepperjack Cheese, shredded
- 1 – Jalapeno, small diced
- 2 TB – Cilantro, chopped
- 8 – Flour Tortillas
- 16 Slice – Bacon (not thick cut)
- ½ Cup Ranch

¼ Cup – El Jefe Taco Sauce
Directions
- Preheat oven to 350 degrees.
- Drizzle the chicken breasts with oil and then season them generously with El Jefe rub.
- Place on a sheet tray and into the oven to bake until they reach an internal temperature of 165 degrees. (about 35-45 minutes)
- Place the chicken in the fridge to cool.
- Once cool, dice the chicken and place in a bowl. Add the shredded pepperjack cheese, diced jalapeno and chopped cilantro. Mix well.
- Season with more El Jefe if desired.
- Add about 1/3 cup of the mixture to a tortilla and roll it up tight.
- Repeat with the remaining mix and tortillas.
- Wrap each tortilla in 2 slices of bacon and secure with a toothpick if needed.
- Place the taquitos on a rack lined tray and placetin the oven.
- Cook until the bacon is rendered toyou liking.
- Make the El Jefe ranch by combining the listed ingredients.
- Plate the taquitos with a drizzle of sauce and an extra garnish of chopped cilantro.
