Ingredients
- 4 – Poblano Peppers

2 C – Pulled Pork
- 2 oz – Cream Cheese, softened

5 T – El Dinero Hatch Chile Taco Seasoning
- 16 Slice – Bacon

4 T – El Jefe Honey Chipotle Taco Seasoning
Directions
- Take a knife and cut the top of the peppers off, about ½” down. This will remove the stem and expose the seeds. Remove the seeds as best you can.
- In a bowl, mix together the cream cheese, pulled pork and the El Dinero seasoning until well combined.
- Stuff the peppers with as much filling as you can without rupturing the pepper.
- Wrap the peppers lengthwise with 2 slices of bacon, and then again spiraling down the other direction with two more pieces of bacon. The pepper should be fully wrapped.
- Preheat smoker to 275 degrees.
- Season the outside of the peppers with El Jefe seasoning.
- Place the stuffed peppers on a rack lined tray and then onto the smoker for 60-75 minutes or until the bacon is crisp and the peppers reach an internal temperature of 165 degrees.
- Rest for 10 minute and the serve.
