Let’s taco ‘bout it! Baja Fish Tacos that are rocking the boat! citrus chili air fryer cod with crunchy cabbage and juicy Pico De Gallo all in one shell. Any day that ends in Y is a good day for tacos!
Ingredients

12 Oz Cod- Cut Into Strips

2 T El Capitan Baja Chili Citrus Taco Seasoning & Rub

1/4 Cup Flour

2 Eggs- Beat
-
1 T Water
-
2 Cups Panko Breadcrumbs
-
Flour Tortillas
-
2 Cups Cabbage- Shredded
-
1 Tomato- Small Diced
-
1 Jalapeño- Small Diced
-
1 Lime- Juiced
-
TT Salt and Pepper
-
2 T Cilantro- Chopped
-
1 Red Onion- Small Dice

1 Avocado- Sliced
Directions
Prepare 3 bowls. In the first bowl add flour and el Capitan and mix well. In 2nd bowl, 2 eggs beat. In 3rd bowl, panko breadcrumbs.
Make Pico de Gallo: combine tomato, onion, jalapeno, cilantro, lime, salt and pepper.
Pat cod filet dry and cut into strips.
Take one strip and coat with El Capitan/flour mixture in bowl one. Shake off excess and place this strip in egg mixture. Allow excess egg drip off. Then, place in the panko bowl until covered. Set aside.
Repeat the process until cod is battered.
Preheat air fryer to 380.
Spray cooking oil in the bottom of the air fryer tray. Arrange all strips in fryer. Do not overlap the fish, make in two batches if necessary.
Set timer for 13 minutes and flip strips half way though.
Warm tortillas and build tacos. Put cabbage down, add cod, top with Pico de Gallo and sliced avocado.
