Ingredients
- 1 LB – 71/90 Shrimp, peeled and deveined, tail off
- 1 Cup – Flour

3 TB – El Capitan Baja Citrus Rub
- 3 – Eggs, beaten
- 2 Cup – Panko Breadcrumbs
- 12 – Flour tortillas
- Limes for garnish
- 2 Cup – Red Cabbage, shredded
- ½ Cup – Red Onion, julienned
- 2 TB – Cilantro, chopped
- ½ - Lime, juiced
- ½ - Avocado
- ½ Cup – Sour Cream

Directions
Set up a breading station.
A. Flour and El Capitan mixture
B. Beaten Eggs
C. Panko Breadcrumbs
- Dredge the shrimp in the flour, and then place them in the egg. Once well covered with the egg wash place the shrimp in the breading.
Repeat with the remaining shrimp.
- Preheat fryer to 350 degrees.
- Fry the shrimp until they are fully cooked and golden brown.
- Place the cooked shrimp on a paper towel lined tray and season with more El Capitan.
- Make the citrus slaw by combining the listed ingredients.
- Make the avocado cream by pureeing the listed ingredients together.
- Heat the flour tortillas and then build the tacos.
- A bed of slaw followed by 5-6 shrimp.
- Drizzle the tacos with some avocado cream and finish the tacos with a garnish of chopped cilantro, cheese (optional) and some lime wedges.
