Ingredients

3 Lb Pork Belly

3/4 Cup Bee Sting Hot Honey Chipotle BBQ Rub

4 T Butter
-
1/4 Cup Honey
-
3/4 Cup Bee Sting Honey Chipotle
Directions
Set smoker to 225 degrees.
Cut pork belly into large pieces and season generously with Bee Sting Rub.
Arrange the seasoned pork belly on a wire rack and place in the smoker for 3 hours.
Remove the pork belly from the wire rack and place in a foil lined baking dish, or a disposable aluminum pan.
Melt the butter and combine with the BBQ sauce and the honey. Pour the mixture over the burnt ends and mix well. Cover with foil.
Return to the smoker for another 1 to 1 ½ hours or until the meat reaches 200 degrees.
Place the burnt ends in a large cast iron pan and finish on the stove top over medium high heat.
Cook for 5-10 minutes or until the sauce is well caramelized.
