Beer Brined Turkey Tenderloins
Tender and moist, we turned up the flavor of these turkey tenderloins by giving them a long soak in a brine of beer, brown sugar, garlic and our honey ale Beer Can Chicken rub. The result is melt-in-your mouth, slightly sweet and malty slices that are the perfect pairing with salads or sides.
Beer Brined Turkey Tenderloins

3 cups | Water |
12 oz. | Beer |
1/4 cup | Cock-A-Doodle Brew Rub |
2 T | Brown Sugar |
2 | Thyme Sprigs |
3 | Garlic Cloves |
1 tsp | Black Peppercorns |
1 cup | Ice Cubes |
1 1/4 lb. | Turkey Tenderloins (about 3) |
1 sprig | Sage |
Instructions:
- In a medium saucepan, combine water, beer, Cock-A-Doodle Brew, brown sugar, thyme, garlic, and peppercorns. Bring to a boil, then reduce to a hard-simmer for 5 minutes.
- Transfer contents to a bowl and add ice cubes.
- When cool, add the turkey tenderloins to the brine, then refrigerate for 4 hours, or overnight.
- Preheat the grill to 350 F.
- Remove turkey tenderloins from the brine, and pat dry. Transfer to the grill and cook for 16 to 20 minutes, rotating every 5 minutes.
- Allow turkey tenderloin to rest for 10 minutes, then slice and serve over lightly dressed greens and pomegranates.
