Ingredients
- 2 Rack – Pork Back Ribs

4 T – Bier Hall Mustard
-
1/3 C – BBQ General SPG Rub
- 1 Stick – Butter
- 1 Jar – Blackberry Preserves
- 2 oz – Bourbon
- 3 .5pint – Blackberries, fresh

3 T - Cornstarch
Directions
- Preheat smoker to 250 degrees.
- Remove the membrane from the underside of the ribs.
- Slather the ribs in the Bier Hall mustard for a binder, and then season generously with BBQ General SPG rub.
- Let the ribs rest at room temperature for 20 minutes to help the seasoning adhere to the meat.
- Place the ribs directly on the smoker, curve up for 3 hours.
- While the ribs are smoking, make the braising sauce by combining the blackberry preserves and bourbon in a saucepan and bringing to a boil. Remove from the heat.
- Cut the butter into tabs.
- Wrap the ribs up in heavy duty foil, curve down.
- Add in the butter tabs and pour the blackberry bourbon sauce into the foil, then wrap securely.
- Place back on the smoker for an additional 2 hours until the ribs are tender.
- Remove the ribs from the foil and rest.
- Pour the sauce remaining in the foil into a sauce pan and bring to a simmer, add fresh blackberries.
- Mix the cornstarch with cold water and gradually whisk it into the simmering liquid until a thick sauce is formed.
- Drizzle the sauce on the ribs and enjoy!
