Bourbon Barrel Beans
Difficulty: Easy
Prep time: 8-12 hours
Cook time: 7 hours
Serves: 6
Ingredients: |
|
8 oz. |
Pinto Beans, dried |
8 oz. |
Northern Beans, dried |
1 quart | Chicken Stock |
1 1/2 quarts | Water, divided |
1 1/2 cups | Bourbon Barrel - Whiskey BBQ |
1 | White Onion |
1/2 cup | Bacon Bits (optional) |
2 T | Bourbon (options) |
Instructions:
-
Day 1:
- Place beans in a large 2 quart measuring cup, or large mixing bowl. Cover with water and refrigerate overnight.
Day 2:
- Drain beans and place them in a cast iron Dutch oven or large pot with a lid. Add chicken stock, 1 cup of water, Bourbon Barrel, and onion. Stir well.
- Place the pot over high heat and bring mixture to a boil. Set the lid on top, leaving a ½ inch gap to see the beans. Lower heat to low and simmer for 5 to 7 hours, stirring occasionally. Keep adding additional water 1 cup at a time, as the beans will slowly soak up the liquid and the sauce, yet need ample time to cook tender.
- Once beans are tender, remove pot from heat, and stir in bacon and Bourbon, if desired. Serve warm.
