Bag it up! This Brown Bag Chicken is not your sack lunch but it is your tasty grilled dinner! A method to keep all the moisture in that tender chicken as you devour each and every bite.
Ingredients

1 Whole Fryer Chicken

1 Onion- Small

1 Carrot
-
1 Stalk Celery
-
3 T Cock-A-Doodle Brew Beer Can Chicken Rub

2 T Olive Oil
-
4 T Butter
Directions
Preheat smoker/grill to 375 degrees.
Remove the gizzard pack from the chicken. Rinse the chicken well under cold water and then pat dry with a paper towel.
Roughly chop the onion, celery and carrot and stuff them into the cavity of the chicken along with the butter. Season the outside of the bird generously with Cock-A-Doodle Brew Rub.
Place the chicken ina brown paper bag. Settle the chicken with the breasts up and the bag on its side. Roll in the open edge of the bag.
Drizzle the top of the bag with oil and rub it into the bag to absorb.
Place in an aluminum pan and place on the grill/smoker to cook for roughly 90 minutes or until the internal temperature of the chicken reaches165 in all areas, especially close to the joints.
Remove from the grill and allow to rest 15 minutes before ripping open the bag and carving the chicken.
