Ingredients
- 1 LB – Shrimp, 41/50 ct (peeled and deveined)

1 T – Cooking Oil

2 T – Buffalo Cajun Wing Rub
- 8 – Flour Tortillas

2 C – Romaine Lettuce, shredded

¼ C – Carrots, very fine dice
-
¼ C – Celery, very fine dice
-
½ C – Ranch
-
¼ C – Blue Cheese Crumbles
- Green Onion – For Garnish
Directions
- Season the shrimp generously.
- Heat a sauté pan over medium/high heat and add cooking oil to the pan.
- Sear off the shrimp, cooking them only for about 4 minutes. Remove from heat.
- Heat the tortillas slightly. Mix together the diced carrots and celery.
- Build the tacos by laying down some lettuce in a tortilla followed by 5-6 shrimp, diced carrots and celery, a drizzle of ranch, 2 tsp crumbled blue cheese and finish them with a garnish of green onion.
