Ingredients
- 1 Can – Crushed Tomatoes (28oz)
- 2 tsp – Tomato Paste
- ½ - Onion, small dice
- 6 clove – Garlic, minced
- 2 TB – Butter Blizzard Seasoning

10 oz – Shredded Mozzarella Cheese
- ½ Cup – Parmesan cheese, grated

- 2 Cup – Flour
- 2 TB – Butter Blizzard Seasoning
- 2 TB – Cornmeal
- ½ Cup – Warm water
- 1 tsp – Sugar
- 1 ¼ tsp – Active dry Yeast
- 2 TB – Olive Oil
Dough
Directions
Preheat your Pro Classic smoker to 225°F.
In a large bowl, combine the flour, cornmeal, and 2 tablespoons of Butter Blizzard seasoning. Mix well.
In a separate bowl, combine the warm water, sugar, and yeast. Stir gently until combined and let it sit for about 1 minute to activate.
Add the yeast mixture and 2 tablespoons of olive oil to the dry ingredients. Stir until a dough forms.
Transfer the dough to a lightly floured surface and knead until it forms a smooth, cohesive ball.
Lightly oil a clean bowl and place the dough inside. Lightly oil the surface of the dough as well. Cover with a towel and let it rise in a warm spot for 1 hour.
In a saucepan, combine the crushed tomatoes, tomato paste, diced onion, garlic, and 2 tablespoons of Butter Blizzard seasoning.
Cook over medium-low heat for 15–20 minutes, stirring occasionally, until the sauce thickens.
Transfer the sauce to an aluminum pan and place it in the smoker for 30 minutes to infuse a smoky flavor.
Once the dough has risen, roll it out into a 12-inch circle.
Place the rolled-out dough into a 9-inch cast iron skillet, pressing it to cover the bottom and up the sides of the pan.
Layer the cheese evenly over the dough. Top with the smoked tomato sauce.
Sprinkle Parmesan cheese on top.
Preheat your oven to 425°F.
Bake the pizza for 20–30 minutes, or until the crust is golden brown and cooked through, and the cheese is bubbly and melted.
Let the pizza rest for 10 minutes before slicing and serving.
