There is no problem a burrito can’t solve. A tot filled, meaty P.I.G sausage and egg burrito is the solution to a hungry tummy. Add a cheesy crust because more cheese is the only logical thing left to do! Let your day be powered by burritos.
Ingredients

12 Eggs

4 Tortillas- Large Burrito Size

1 Lb Cheddar Cheese Shredded

1 Pkg Tater Tots
-
1/2 Red Onion- Diced
-
1 Red Pepper- Diced
-
1/2 Cup - Hot Sauce
-
12 Breakfast Sausage Links- Cooked, Sliced

4 T Notorious P.I.G Pulled Pork Rub
Directions
Fry the eggs in a sauté pan with some butter. Keep them either sunny side up or over easy so that the yolk will run inside the burrito.
Fry or air fry the tater tots.
Heat the flat top to 325 degrees or medium high heat.
To make the burritos, gently heat up the tortilla on the flat top, about 10 seconds each side. Fill with ¼ of the tater tots, 3 fried eggs, 2 oz of shredded cheese, a pinch of onion and pepper, ¼ of the breakfast sausage, 1 TB of Notorious P.I.G. and a few shots of hot sauce.
Wrap up the burritos, and place them fold side down on the flat top to seal.
To crust : Sprinkle 2 oz of cheese over a 7” X 14” rectangle on the flat top and square off the edges.
Once the cheese is just melted, place the burrito down on the cheese at one end and roll it to encase it in the cheese. Flip the burrito on all sides for 10-15 seconds each side to adhere the cheese to the tortilla.
Serve with more hot sauce and enjoy!
