The ultimate summer snack has arrived! Everything is better wrapped in bacon, right? These pickles are gutted, stuffed with meat and cheese, and wrapped in bacon. Yum!
Ingredients
- 8 OZ – Ground Beef

1 ½ T – Rodeo Rub

¾ C – Cheddar Cheese, Shredded
- 12 – Dill Pickle 1/2s (jumbo)
- 12 Slice – Bacon (not thick cut)

3 T – Rodeo Rub
Directions
- Cook the ground beef in a skillet and drain the fat.
- Return to the heat and add 2 TB of water along with 1 ½ TB of Rodeo Rub.
- Cook on low until the water is absorbed.
- Cool completely
- Preheat grill or smoker to 325 degrees.
- Carve out the center of the pickles, creating a little canoe.
- Stuff the pickles with ground beef and shredded cheese. Fill them until the pickles are heaping.
- Wrap each pickle in a slice of bacon to cover the stuffing completely. Secure with toothpicks.
- Place the pickles directly on the smoker. Cook for 45-60 minutes until the bacon is rendered to your liking.
