Ingredients
-
8 to 9 LB – Pit Ham
-
2 T – Bier Hall Bavarian Ale Mustard
-
4 T – Notorious P.I.G. - Pulled Pork Rub
-
¾ C – Cherry Bomb - Door County Cherry BBQ
-
1 ½ Oz – Bourbon
-
Orange Slices and Cherries for garnish
Directions
Remove the ham from the wrapping and rinse under cold water. Then pat it dry with a paper towel.
Preheat smoker to 300 degrees.
Making straight diagonal cuts, score the ham to make diamond pattern on the top.
Rub the entire ham with the mustard and then season generously with Notorious P.I.G.
Place the ham on a rack lined sheet tray and smoke for 2 to 3 hours or until the internal temperature reaches 130 degrees.
Combine the Cherry Bomb BBQ sauce and bourbon together in a bowl. Baste all the surface of the ham that you can reach. Smoke for another ½ hour and baste again.
Once the internal temperature of the ham reaches 145 degrees, give it one last bast with sauce and garnish with cherries and oranges. Smoke for 15 minutes to finalize.
Remove the ham from the smoker and allow to rest for 15 minutes before slicing.
Enjoy!
