Crispy Corn Fritters
Turn your fresh summer sweet corn into crisp corn fritters that are the perfect dinner, breakfast, snack or appetizer. For max crispiness, we recommend frying in a deep cast iron skillet. Drizzle or dip the fritters in a homemade Honky Tonk Hot Sauce for an extra kick of flavor and heat.

1 1/2 cups | Flour |
2 T | Cornmeal |
1 T | Sugar, granulated |
2 tsp | Baking Powder |
1 1/2 T | Honky Tonk Nashville Hot Chicken Rub |
3 cups | Corn Kernels (fresh or frozen) |

Jalapeño, minced |
1 T | Chives, minced |
1/2 cup | Milk |
2 | Eggs |
1/2 cup | Vegetable Oil, for pan-frying |

Instructions:
- In a mixing bowl, whisk together flour, cornmeal, sugar, baking powder, and Honky Tonk. Fold in corn, jalapeño, and chives.
- In a small bowl, mix together milk and eggs, then pour over the corn mixture. Stir with a spatula until all of the flour is incorporated. Set aside.
- Heat the oil into a large cast iron skillet over medium heat. Working in batches, drop 4 portions of the batter evenly around the pan and flatten each slightly with the back of a metal spatula. Pan-fry for 2 to 3 minutes per side, until golden-brown
- Transfer the fritters with a slotted spatula to a paper-towel lined tray. Continue making fritters with the remaining batter. Serve warm with Honky Tonk hot sauce.
