Ingredients
- 8 oz – Cream Cheese, softened

2 T – Spicy Dill Pickle Wing Rub

2 T – Pickle Juice
- 4 oz – Cheddar cheese, block
- 4 – Whole Kosher Dill Pickles
- 8 Slice – Bacon (not thick cut)
Directions
- Preheat grill or smoker to 275 degrees.
- Mix the cream cheese, pickle juice and Spicy Dill Pickle wing rub in a bowl until well combined.
- Cut the cheese into ½” cubes.
- Cut the pickles into coins about ¾” thick.
- Cut the bacon in ½.
- Lay a pickle coin flat and then wrap it in a piece of bacon, secure with a toothpick. It should now look like a shot glass.
- Drop a cheddar cube into each pickle cup.
- Spoon the cream cheese into a pastry bag. Pipe the cream cheese into the cups, filling them ¾ full.
- Place the pickle shots on a rack and then onto the smoker.
- Cook for 45-50 minutes until the bacon is cooked to your liking. The cream cheese will ooze out of the top.
- Rest the pickle shots for 5 minutes before serving.
