Bigger is better! Or at least that saying holds true when we’re talking about smoked Beef Ribs. These fall off the bone and tender ribs were seasoned with our SPG BBQ General and smoked to perfection!
Ingredients
-
1 Rack – Beef Plate Short Ribs
- 2 TB – Olive Oil
-
½ Cup – BBQ General SPG Rub
- 1 Cup – Beef Broth/Stock
-
Red Chimichurri
Directions
- Preheat smoker to 275 degrees.
- Trim the meat side of the ribs. Remove excess fat and silver-skin to expose the meat.
- Lightly drizzle with the olive oil and rub into all sides of the meat.
- Generously season with BBQ General SPG Rub. Allow to rest at room temperature for 10-15 minutes to come to room temp and absorb the seasoning.
- Place the ribs directly on the smoker for 3 hours.
- Place the ribs in an aluminum pan and pour in the beef stock. (do not pout onto the ribs, pour into the pan)
- Cover the ribs with parchment and foil and place back on the smoker until the ribs reach a temperature of 205 degrees.
- Remove from the smoker and place in an empty cooler to rest for at least 1 hour, but up to 3.
Serve with Red Chimichurri and enjoy!
