Life is about exploring pasta-bilities! Check out a plate of Lemon Carbonara. A pile of delicious noodles sauced with a creamy lemon zing and shreds of sharp parmesan. Only thing missing is a fork and a mouth.
Ingredients
-
1 Box Spaghetti
-
5 Egg Yolks
-
1 Lemon
-
4 Oz Parmesan- Shredded
-
TIP: Use Block parmesan and shred it yourself, it will affect the flavor
-
1 t Black Gold Garlic Pepper
Directions
Bring a pot of salted water to a boil.
Add pasta and cook to al dente.
Remove 1 ¼ Cup of pasta water and set aside before straining out the noodles.
While the pasta is cooking, in a large bowl combine the shredded parmesan cheese, black gold and egg yolks. Stir together until a thick paste is made.
Using a micro-plane, zest and juice the lemon and add it to the cheese mixture.
Once you have strained the pasta, add it to the bowl with the cheese mixture and begin to stir.
Add reserved pasta water ¼ cup at a time, stirring in between, until a nice creamy sauce is made.
Serve garnished with more shredded parmesan and chopped parsley.

Really great but two observations. It would be good to know how many ounces of dry pasta one should actually use. A box is way too vague. Also I add a scant teaspoon of sugar, really brightens it up.
