Ingredients
- 1 LB – Flank or Skirt Steak

3 T – El Capitan Baja Citrus Taco Rub
- 1 – Red Onion
- 12 – Grape Tomatoes

½ C – Sour Cream
-
1 T – Lime Juice
-
1 T – Cilantro, chopped
Directions
- Preheat grill to 400 degrees, setup for direct heat grilling.
- Trim the steak if necessary and then season generously with El Capitan Taco rub.
- Peel the onion and cut into ¾” slices, keep the rings together.
- Place the steak and the onion slices on the grill.
- Cook the steak to your desired temperature.
- Flip the onions every 2 minutes, cooking for a total of 8 minutes.
- Remove the food from the grill and rest the meat.
- Make the dipping sauce by combining the sour cream, lime juice and chopped cilantro.
- Set in a small bowl for dipping.
- Slice the steak on a bias and against the grain of the meat. Keep the slices thin.
- Cut the grape tomatoes in ½.
- Cut the onion rings in ½.
- Build the bite on 4” skewers.
- Poke a skewer in one end of the steak then thread on a ½ tomato.
- Wrap the steak around and run through the skewer again.
- Now add a piece of onion.
- Secure the end of the steak on the skewer.
- Garnish with more cilantro and enjoy!
