Ingredients

12 – Hard Boiled Eggs

1 can – Diced Green Chiles (4oz)

¼ Cup – Mayonnaise

4 tsp – El Dinero Hatch Chile Rub

Blue Corn Tortilla Chips for garnish

Chopped Cilantro for garnish
Directions
- Cut the hard-boiled eggs in ½ and remove the yolks.
- Place the yolk in a bowl and smash with a fork until the yolks are relatively smooth.
- Place the green chiles in a blender and puree.
- Add the green chile puree to the yolks along with the mayo and El Dinero rub.
- Mix together until well combined.
- Pipe the yolk mixture into the egg white 1/2s and then garnish with a corner of a tortilla chip followed by a sprinkle of chopped cilantro.
- Enjoy!
