Ingredients
- 2 LB – Velveeta Queso Blanco
- 1 can – Rotel Tomatoes
- 1 can – Green Chiles
- 8 oz – Pepper Jack Cheese
- 2 TB – Garlic, minced
- 8 oz – Cream Cheese
- 1 ½ LB – Chicken Thighs

3 TB – El Dinero - Hatch Chili Verde Taco Seasoning & Rub
- Garnish – Chopped Cilantro
Directions
- Preheat smoker to 250 degrees.
- Dice the Velveeta, pepper Jack and cream cheeses into 1” cubes.
- Place the Velveeta, pepper jack cheese, cream cheese, green chiles and rotel tomatoes in a 9X13 aluminum pan.
- Place on the smoker for 2 hours.
- Season the chicken generously with El dinero taco rub.
- Sear the chicken off in a large skillet over medium high heat.
- Once seared, place the chicken on the smoker until they reach an internal temperature of 165 degrees.
- Chop the chicken and stir into the queso along with the minced garlic.
- Stir the queso gently but thoroughly until well combined and place back on the smoker for 10-15 minutes.
- Garnish the queso with chopped cilantro and enjoy!
