Ingredients
- 3 LB – Beef Cheeks

2 T – Olive Oil
-
½ C – El Jefe Honey Adobo Taco Rub

1 ½ C – Beef Broth
- 8 oz – Beer, Mexican Style
- Taco toppings
Directions
- Preheat smoker to 250 degrees.
- Trim any fat from the beef cheeks and remove as much silver skin as possible.
- Pat the meat dry with paper towels.
- Lightly drizzle the meat with olive oil and then run it into the meat.
- Season the meat generously with El jefe and allow it to rest at room temperature for 30 minutes.
- Place the meat directly on the smoker and smoke for 3-4 hours until the seasoning is well tacked to the meat.
- Place the meat in an aluminum pan and add beef stock, beer and a little more seasoning.
- Cover with foil and return to the smoker for 3-4 hours until the meat reaches an internal temperature of 205 degrees and is probe tender.
- Rest the meat for 30 minutes before shredding.
- Use your favorite taco toppings and enjoy!
