Ingredients
- 2 LB – Pork Belly

¼ C – Eye Opener Coffee Bourbon Rub
- 6 – English Muffins
- 6 – Eggs
- 4 oz – Smoked Cheddar Cheese
- 4 – Jalapenos
Directions
- Preheat the smoker to 250 degrees.
- Season the pork belly generously with Eye Opener rub. Let the meat rest at room temperature for 20 minutes to help the seasoning adhere to the meat.
- Place the pork belly on the smoker and cook for about 3 hours until the internal temperature reaches 165 degrees.
- Remove the pork belly from the smoker and rest it for 30 minutes.
- Slice the pork belly as thick or thin as you like.
- Preheat the flattop or skillet to 350 degrees.
- Fry up the pork belly. Once cooked to your liking, set aside.
- Toast your English muffins.
- Slice the jalapenos in ¼” slices and sauté them on the flattop, then set aside.
- Melt some butter if needed, or just use rendered pork belly fat to fry the eggs.
- Build the sandwiches with a few slices of pork belly, sliced cheddar, sauteed jalapenos and finally a fried egg.
