2 T | Olive Oil |
1 T | Butter |
1 | Yellow Onion, minced |
2 cloves | Garlic, minced |
1/2 tsp | Thyme, fresh |
2 T | Flour |
1/2 cup | Milk |
1/4 cup | Heavy Cream |
1 | Refrigerated Pizza Dough |
1/2 cup | Ricotta Cheese |
1/8 tsp | Salt |
1/2 tsp | Good Fella + extra for topping |
1/2 T | Italian Parsley, chopped |
Instructions:
-
In a small saucepot, heat olive oil and butter over medium heat. Add onion, garlic, thyme, and season with salt and pepper. Sauté 2 minutes, then add flour. Cook flour mixture for another minute. Remove from heat and whisk in milk and heavy cream. Return to heat and whisk until sauce thickens and coats the back of a spoon. Set aside to cool.
-
In a small mixing bowl, whisk together ricotta cheese, salt, and Good Fella. Set aside.
-
Set pizza stone inside oven and preheat to 500° F.
-
On a lightly floured surface, roll out dough to form a 12 to 16-inch disc. Remove stone from oven and place dough on top of stone. The dough will start to cook immediately, so it is important to work quickly. Spread ½ cup of white sauce over pizza dough. Dollop teaspoons of ricotta mixture over white sauce.
-
Place pizza in the oven and turn the oven on broil. Broil for 3 to 6 minutes, until cheese starts to bubble and slightly caramelize.
-
Remove from oven, garnish with parsley and a couple of additional cranks of Good Fella. Slice and serve.
