Grapefruit & Fennel Salad
The best of winter produce comes together for a refreshing, Italian-inspired side. Tart grapefruit and licorice-y, aromatic fennel are tossed with fresh herbs and a Good Fella Italian Herb vinaigrette.
Grapefruit & Fennel Salad

1 | Red Grapefruit |
1 | Fennel Bulb, julienned |
1/3 cup | Italian Parsley Leaves |
1 T | Mint Leaves, chopped |
1 tsp | Rosemary Leaves, chopped |
3 T | Olive Oil |
1 1/2 T | White Balsamic Vinegar |
2 tsp | Honey |
2 tsp | Good Fella Italian Herb |
1 T | Fennel Fronds |
TT | Sea Salt |
Instructions:
- Segment the grapefruit by removing the rind, and cutting between each membrane. Place grapefruit segments in 1 bowl, then squeeze the juice from the membrane into another bowl for the vinaigrette.
- Combine the fennel, parsley, mint, and rosemary in with the grapefruit segments. Transfer to a platter or shallow serving dish. Set aside.

To the bowl with grapefruit juice, whisk together the olive oil, vinegar, honey, and Good Fella. Spoon vinaigrette over the fresh salad, garnish with fennel fronds, and serve.
