Ingredients
- 3 LB – Chuck Roast

3 T – Chop Shop
- 6 – Onions
- 4 Clove – Garlic
- 2 Can – Guinness

1 ½ C – Beef Broth or Stock

2 T – Cooking Oil

3 T – Sugar
- 12 pack – Slider Buns
- 10 Slice – Provolone Cheese

3 T – Butter, melted

1 T – Chop Shop
Directions
- Preheat oven to 350 degrees.
- Season the chuck roast generously with Chop Shop.
- Julienne all the onions
- Add oil to a large sauté pan and place over medium/high heat.
- Sear off the chuck roast on both sides.
- Prepare a roasting pan and spread ¼ of the onions on the bottom of the pan along with the cloves of garlic.
- Place seared chuck roast on top. Pour in 1 can of Guinness and the beef stock.
- Cover with parchment and then foil. Place in the oven for 3 – 3.5 hours until fork tender.
- While the chuck roast is braising, cook the braised onions.
- Us the same sauté pan from before. Add the onions to the pan and place over high heat until the onions start to brown.
- Lower heat and cook 4 minutes.
- Add the remaining can of Guinness and bring to a simmer.
- Cook the onions until they are golden brown and very tender. Season to taste with sugar to cut the bitterness.
- Once the meat is tender remove from the oven and shred.
- Build the sliders. Cut the bread in ½, keeping the whole loaf intact.
- Lay down ½ of the provolone cheese on the bread.
- Spread out the braised onion on the cheese followed by the braised beef.
- Top with more cheese and replace the top buns.
- Brush the top buns with melted butter and season with Chop Shop.
- Place back in the oven for 10-12 minutes until the bread is nicely toasted and the cheese is melted.
- Rest 5 minutes before serving with a side of the beef braising liquid as a dip.
