Ingredients
- 12 oz – Chicken Breast

½ C – Flour
- 1 – Egg
-
1 C – Panko Breadcrumbs
-
½ C – Pretzel Breadcrumbs
-
2 T– Oil
-
½ C – Jackpot Carolina Gold Sauce
-
½ C – Red Onion, julienned
-
1 ½ C – Mozzarella Cheese, shredded
- 1 – Pennsylvania Dutch Pretzel Kit
- Parsley for garnish
Directions
- Preheat oven to 350 degrees.
- Thinly slice the chicken breast and then get a breading station set up. First set the flour in one bowl, beaten egg in another and finally, combine the breadcrumbs and pretzel breadcrumbs together in a final bowl.
- Bread the chicken breasts in that order.
- Heat a saute pan over medium high heat and add the oil to the pan.
- Sear the chicken for 2 minutes on each side to seal the breading and then place the chicken on a sheet tray. Finish cooking the chicken in the oven until an internal temp of 165.
- Once the chicken is cooked, set it aside to cool.
- Make the pretzel dough according to the directions on the box. We will have a different process once the dough is done rising.
- Get the baking soda/water bath together in a shallow saucepot or rondo.
- Once the dough has risen, cut it into 3 equal parts.
- Form the balls and start working them into the shape of a pizza crust.
- Drop the pizza crust into the boiling baking soda mixture and blanch for 30 seconds, carefully flipping ½ way through.
- Remove the pizza crust from the bath and place it on a rack to dry.
- Increase oven temp to 425 degrees.
- Once the dough is dry, spread the Jackpot sauce on the crust out, leaving ¾” crust around the edge.
- Top with cheese. Cut the chicken into strips and distribute on the pizza. Sprinkle with julienned onion.
- Use the pretzel salt to sprinkle onto the outer crust.
- Place the pizza on a parchment lined tray and into the oven to bake for 12-18 minutes, rotating ½ way through.
- Once the pizza is cooked and the crust is lightly browned, drizzle with a little more Jackpot sauce and garnish with chopped parsley.
- Cut and enjoy!
