Directions
- Cut the chicken breast into small, ¾ oz pieces. Place in a bowl with the buttermilk and 1/3 cup of Honky Tonk sauce and allow to marinate for at least 1 hour.
- Preheat fryer to 350 degrees.
- Cut the hard boiled eggs in ½ and remove the yolks, placing them in a mixing bowl.
- Add mayo, 3 TB Honky Tonk sauce and pickle relish to the yolks and mash together until smooth. Add the mixture to a piping bag and reserve in the fridge until ready to use.
- Combine 1 ½ cup of flour and 2 TB of Honky Tonk rub for the chicken breading.
- Take a piece of chicken and allow excess buttermilk to drip off for a few seconds before placing the chicken in the flour mixture to bread.
- Then add the chicken back to the buttermilk to coat. Then once again into the flour for a double breading.
- Fry the chicken for 5-6 minutes until golden, crispy and fully cooked. Set aside.
- Set up a breading station for the egg whites. Flour, then the beaten eggs and finally the breadcrumbs.
- Bread the eggs by dredging them in flour, then into the egg and then gently packing with breadcrumbs.
- Fry for 2-3 minutes until golden brown and crunchy.
- Build the deviled eggs by piping 1 TB of the yolk mixture into each fried egg white.
- Top with a piece of fried chicken.
- Garnish with a drizzle of Honky Tonk sauce and a slice of pickle.
- Enjoy!
