Ingredients
- 2 LB – Ground Beef

½ C – Crumbled Tortilla Chips

½ C – Heavy Cream
- 2 – Jalapenos
- 8 oz – Smoked Cheddar Cheese, shredded

4 T – El Dinero Taco Rub
Directions
- Preheat smoker or grill to 350 degrees.
- Combine the crumbled tortilla chips and heavy cream in a bowl and allow the chips to soften for 15 minutes.
- Once softened, add the ground beef, shredded cheese and seasoning.
- Stem and core the jalapenos, removing the seeds and then cut into a small dice. Add to the bowl.
- Mix the meat with your hands until the ingredients are well mixed.
- Make 2 oz meat balls and them place them in an aluminum and then place them on the smoker.
- Smoke/cook for 40-50 minutes until the internal temperature of the meatballs reaches 155 degrees.
- Allow the meatballs to rest for 10 minutes before garnishing with some crumbled tortilla chips and cilantro.
