Ingredients
- 2 LB – Ground Beef
- 1 – Egg

1 C – Breadcrumbs
- ½ - Red Onion, minced

3 T – Bee Sting Hot Honey BBQ Rub
- 4 – Jalapenos
- 4 oz – Cream Cheese
- 14 Slice – Bacon (thick cut)

2 T – Bee Sting Hot Honey BBQ Rub

½ C – Bee Sting Hot Honey BBQ Sauce
Directions
- Preheat smoker to 275 degrees.
- Cut the stem off of the jalapenos and using a paring knife, cut out the core and remove as many seeds as possible.
- Stuff the jalapenos with the cream cheese.
- Mix the ground beef, egg, breadcrumbs, red onion and 3 TB Bee Sting together in a bowl until very well combined.
- Lay down some plastic wrap and roll out the meat to a 6” X 12” rectangle
- Lay the jalapenos down in a row lengthwise on the meat
- Use the plastic wrap to help roll up the meat around the jalapenos.
- Seal the seams and edges.
- Make a bacon weave the is 6 slices wide and 8 slices long.
- Roll the meat loaf up with the bacon weave and secure the edges with toothpicks.
- Place on a rack lined tray and then onto the smoker for about 2 hours. (start checking temp after 1 ½ hours)
- Once an internal temperature of 155 degrees is reached, baste the meatloaf generously with Bee Sting BBQ sauce. Smoke for an additional 15 minutes.
- Rest the meatloaf for 10 minutes before slicing.
