With Thanksgiving coming to an end everyone is stuck with all the leftovers! Mix it up a little and try creating a fun dip with your potato leftovers!
Ingredients

2 C – Mashed Potatoes, leftover
- 8 oz – Bacon

½ C – Chives, chopped
-
½ C – Chicken Stock
-
½ C – Sour Cream
-
1 T – Bacon Bomb

1 ½ C – Cheddar Cheese, shredded
Directions
- Chop the bacon and cook over medium high heat until the bacon is rendered and crispy. Drain.
- Preheat oven to 375 degrees.
- In a mixing bowl, combine the leftover potatoes, cooked bacon, chives, chicken stock, sour cream and bacon bomb. Stir until well combined.
- Spread the potato mixture into a cast iron pan and top it with the shredded cheese.
- Place in the oven for 20-25 minutes until the potatoes are heated through and the cheese is melted.
- Serve with pork rinds for dipping.
