Directions
Peel off out layers of cabbage and set aside.
Cut cabbage in half and remove the core
Fine chop or shred cabbage and place in a large mixing bowl
Add Coca-A-Doodle Brew seasoning and massage into cabbage for 3-5 minutes.
Let sit for 30 minutes. The cabbage will start to juice (this will be the brine) and then massage/squeeze cabbage 1-2 more minutes to create more brine.
Put cabbage in jar and pack tight with a spoon or your fist, adding more cabbage until jar is ¾ full.
Press down cabbage again so the brine is fully covering cabbage. If not enough brine to fully cover cabbage, add some water. Cabbage needs to be fully submerged.
Taking a whole outer leaf and fold it into a round. Place in jar on top of cabbage and press into jar until it rest on top of cabbage and the brine starts to come into the cabbage leaf.
Place cover on jar cover with a towel to avoid sunlight and store in a cool (62-72 degrees) dry place for 3-7 days.
Place jar in sink and unscrew lid. Kraut will be ready to eat immediately and can be stored in fridge after opened.
