Desert Pepper Corned Beef Hash

2 Lb | Baked Potatoes- Large dice, Any Kind |
1/2 | Onion- Small Dice |
2 Lb |
Corned Beef Chopped |
8 | Eggs |
1 T | Desert Pepper Tequila Blend |
2 T | Vegetable Oil |
Instructions:
- Pre-heat oven to 350 degrees.
- In a large cast iron pan, over medium/high heat, add oil and sauté the onion until translucent
- Add the corned beef and potatoes and stir until well combined.
- Season with Desert Pepper
- Crack eggs and open them over the top of the hash, evenly spread out over the dish.
- Place in the oven for 20-25 minutes or until the egg whites are fully cooked.
