A fall favorite just in time for dinner! Serve up this Notorious P.I.G. smoked chili mac for that chilly after school dinner.
Ingredients
Chili
- 2 LB – Ground Beef
-
5 T – Notorious P.I.G.
- 1 – Onion
- 1 – Red Bell Pepper
- 1 – Jalapeno
-
2 T – Minced Garlic
- 1 Can – Stewed Tomatoes (15oz)
- 1 Can – Fire Roasted Tomatoes (15oz)
- 1 Can – Kidney Beans (drained)

2 Cups – Beef Broth/Stock
-
1 T – Salt (to taste)
Mac N Cheese
- 1 LB – Macaroni Noodles (cooked per instructions on the box)

8 T – Butter
-
4 T – Flour
-
2 Cups – Heavy Cream
- 4 oz – Cream Cheese
-
2 Cups – Smoked Cheddar Cheese, shredded

2 Cups – Smoked Pepperjack Cheese
-
3 t – Multi-tool Ultimate Blend
Directions
Preheat smoker to 275-300 degrees (or oven to 325)
- Dice the onions and peppers and sauté in a large Dutch oven over medium high heat until translucent.
- Add garlic, both tomatoes and kidney beans, and beef stock. Bring to a simmer.
- Season the ground beef with Notorious P.I.G. and mix well with your hands.
- Form the meat into a round meatloaf and place on a rack lined sheet tray.
Once the Chili mix reaches a simmer, place in the smoker (or oven). Place the rack holding the meatloaf directly over the Dutch oven so that the drippings will fall into the chili as it cooks.
- Cook for 2 hours, or until the internal temperature of the meatloaf reaches 145 degrees. (stir chili occasionally to avoid burning)
- Remove the meatloaf and crumble the beef. Then add it back to the chili and stir to combine.
Season and adjust consistency with more beef stock if needed. Smoke/ Cook for an additional 30 minutes.
- While the chili is smoking, make the mac N cheese.
- Melt the butter in a saucepan over medium heat. Once melted, whisk in the flour and cook for 3 minutes.
- Slowly add in the cream while stirring constantly. Bring the mixture to a simmer to thicken.
- Lower heat to low and slowly stir in the cheeses. Stir until well combined and then season with Multi-tool.
- Once the chili and mac n cheese are done, mix them together to make the most delicious mac n cheese you’ll ever have.
