Pickle Fried Cod Bites
Fish fry with a twist, these crispy fried cod nuggets are coated in a spicy pickle flour mixture then fried until golden perfection. Serve with a homemade tartar sauce!

Ingredients
- 1 LB – Cod
- 2 Cup – Flour

3 TB – Spicy Dill Pickle Wing Rub
- ½ tsp – Baking Soda
- ½ tsp – Baking Powder
- 1 Cup – Milk
- 1 – Egg
- ¾ Cup – Mayo
- 3 TB – Pickle, diced
- 1 TB – Capers, chopped
- Juice from ½ lemon

1 TB – Spicy Dill Pickle Wing Rub
Directions
Preheat fryer or deep pan with vegetable or peanut oil to 350 degrees F
- Pat the fish dry with paper towel and then cut into 2” cubes.
- Mix the flour, 3 TB Spicy Dill Pickle Wing Rub, baking powder and baking soda together in a bowl.
- In a separate bowl, whisk together the egg and milk.
- Dredge the cod bites, a few at a time, in the flour mixture and then place them in the milk.
- Dredge again in the flour mixture and then set aside. Bread the remaining fish.
- Fry the fish for 5-8 minutes until fully cooked and golden brown.
- While the fish is frying, combine the mayo, diced pickle, chopped capers, lemon juice and 1 TB Spicy Dill Pickle Wing Rub to make your tartar sauce.
- Once the fish is done frying place on a paper towel lined tray to dry for 3-5 minutes before serving.
