Ingredients
- 3 LB – Center Cut Pork Loin (Boneless)
- ½ - Pineapple, diced
- 1 – Jalapeno, Diced
- ½ - Red Bell Pepper, Diced
- ½ - Red Onion, Diced
- 4 oz – Queso Fresco, crumbled
- ½ Bunch – Cilantro, chopped
- 16 Slice – Bacon

½ C – El Dinero Hatch Chili Taco Rub
Directions
- Preheat grill to 350 degrees, set up for indirect cooking.
- Dice the necessary ingredients and combine the pineapple, jalapeno, red pepper, red onion, queso fresco and ½ of the chopped cilantro in a bowl. Set aside.
- Cut the pork loin into 4 equal portions.
- Butterfly the pork into chops. Pound them out to about ¾” thick.
- Season with El Dinero
- Stuff each chop with about ½ cup of the pineapple mixture and then fold over the chop to close.
- Wrap each stuffed chop in 4 pieces of bacon to fully cover, secure with a toothpick if necessary.
- Season the outside of the chops with more El Dinero
- Place the chops on the grill and cook until the bacon is rendered to your liking, with a minimum internal temperature of 135 degrees.
- Rest the chops for 10 minutes before serving, topped with more pineapple salsa and the remaining chopped cilantro.
