Pulled Pork Breakfast Burrito
Smoky, spicy and packed with flavor, you won't be able to have just one of these Pulled Pork Breakfast Burritos. Fill it with leftover Notorious P.I.G. Pulled Pork, beans, bacon, poblanos, cheese and a fluffy layer of eggs. Give it an extra kick with one of our Secret Sauces (we recommend the Honky Tonk Hot Sauce).

2 1/2 cups | Notorious P.I.G. Pulled Pork |
15 1/2 oz. | Pinto Beans, canned & drained |
1 cup | Bacon, diced |
1 | Yellow Onion, diced |

Poblano Pepper, roasted & chopped |
2 T | Cilantro, chopped |
1 T | Parsley, chopped |
1/2 T | Chives, chopped |
3 T | Butter |
1 doz. | Eggs, beaten |

Large Flour Tortillas |
1 1/2 cups |
Cheddar Cheese, shredded |

Instructions:
- Heat a skillet over medium heat. Add bacon and sauté for 5 minutes, until bacon begins to brown. Add onion to the skillet and sauté for 2 minutes, until onions are translucent and bacon is crisp. Stir in pulled pork, pinto beans, and roasted poblano peppers. Cook for another 2 minutes, then stir in fresh herbs. Remove from heat.
- Melt butter in a non-stick skillet, over medium heat. Scramble the eggs, then remove from heat and set aside.
- Assemble burritos: Place flour tortillas on a flat surface. Sprinkle with half of the shredded cheese, then divide scrambled eggs and pulled pork filling over the cheese, sprinkle with remaining cheese, then roll. Serve warm.
