Ingredients
- 1 LB – Corned Beef, cooked
- 8 oz – Cream Cheese, softened
- 3 oz – Swiss Cheese, shredded

1/3 C – Sauerkraut

2 t – Black Gold
- 10 Slice – Bacon

1 ½ C – Mayo
-
1/3 C – Ketchup
-
2 T – Bier Hall Mustard

2 t– Black Gold
-
1 ½ T – Lemon Juice
Russian Sauce
Directions
- Preheat smoker to 375 degrees.
- Cut the corned beef ¾” thick and then cut out 1 ½” wide circles. Reserve the unused corned beef for other recipes.
- Combine the softened cream cheese, Swiss cheese, Black Gold and sauerkraut together in a bowl and stir until well combined.
- Spoon the mixture into a piping bag and set aside.
- Build the shot glasses. Cut the bacon in ½. Wrap ½ slice of bacon around the corned beef coins, with the corned beef being at the bottom edge of the bacon. Secure with a toothpick, and it should look like a shot glass.
- Pipe the cream cheese mixture into the shot glasses, filling them about ¾ full. (the cream cheese will expand during cooking)
- Place the Reuben bombs on a rack lined tray and onto the smoker.
- Smoke for 60-75 minutes until the bacon is cooked to your liking.
- While the bombs are smoking, make the Russian dressing by combining the listed ingredients in a bowl.
- Rest the Rueben bombs for 5 minutes after coming ff the smoker. Top them with a drizzle of Russian dressing and enjoy!
