Ingredients
- 3 LB – Beef Chuck Roast

3 TB – Prime Time Butcher’s Blend
- 2 TB – Cooking Oil
- 6-7 Clove - Garlic
- 3 – Large Carrots
- 1 – Onion
- 4 Stalk – Celery
- 4 Cup – Beef Stock
- 1 LB – Baby Red Potatoes
Directions
Preheat your Pro Classic smoker to 180 degrees on the smoke setting.
- Season your chuck roast generously on all side with Prime Time.
- Heat a large skillet on high heat. Add cooking oil and sear the chuck roast on each side for 3-4 minutes until golden and crusty.
- Place the garlic cloves in the bottom of a ½ in aluminum pan.
- Roughly chop the celery, onions and 1 carrot and add to the aluminum pan.
- Place the seared chuck roast in the pan. Add 4 cups of beef stock to the pan.
- Cover the pan with parchment and aluminum foil.
- Place the roast in the smoker.
- Fill a sawdust pan ½ full of sawdust and dampen with water. Place the pan directly on the heating element.
- Smoke 1 ½ hours.
- Carefully remove the sawdust pan from the smoker.
- Change to the cook setting and increase the temperature of the smoker to 300 degrees.
- Cook for 5-7 hours until the roast is almost fork tender.
- Peel the remaining 2 carrots and chop into bite sized pieces.
- Add the carrots and potatoes to the pan and return to the smoker for about 1 more hour until the vegetables are cooked and the roast is tender.
- Rest 20 minutes before serving.
