Ingredients
- 5-8 – Peaches (4 cups total peeled and sliced)

2/3 C – Sugar
- 1 – Lemon
- 2 oz – Bourbon

6 T – Butter, unsalted

1 C – Flour
-
1 C – Sugar

2 t – Baking Powder
-
½ t – Cinnamon
-
1/8 t – Ground Nutmeg
-
2 T – Blue Ribbon Rub
-
¾ C - Milk
- Ice Cream for serving
Directions
- Preheat smoker to 275 degrees.
- Peel the peaches and then cut in ½. Remove the pit and then slice the peaches and place them in a bowl.
- Add 2/3 cup of sugar and bourbon to the peaches. Zest the lemon and then juice the lemon. Add to the peaches and stir until well combined.
- Add butter to a 12” cast iron pan and place on the smoker to preheat the pan and melt the butter.
- Make the batter.
- Combine the flour, sugar, baking powder, Blue Ribbon rub, nutmeg and cinnamon in a bowl and stir until well mixed.
- Stir in the milk. The batter does not need to be completely smooth.
- Once the butter in the cast iron is melted, pour in the batter.
- Top the batter with the peaches and then place on the smoker.
- Smoke for 60-75 minutes until the batter is set. The peaches will sink into the batter.
- Cool for 10-15 minutes and then serve with vanilla ice cream.
