Ingredients
- 10 OZ – Smoked Sausage

2 C – Chicken Broth
-
1 C – Milk
-
2 C – Polenta, Coarse

½ C – Parmesan Cheese, grated

2 T – Black Gold
- 2 oz – Blue Cheese, crumbled
- 3 oz – Fontina Cheese, diced
- Green Onion for Garnish
Directions
- Cut the smoked sausage into ½ moons and sear off until the sausage is slightly browned. Set aside.
- Bring the chicken broth to a boil in a medium saucepan over medium/high heat.
- Slowly whisk in the polenta and lower heat to medium/low
- Cook for 10 minutes until the polenta thickens, stirring often
- Stir in milk, parmesan cheese, Black Gold and cook an additional 5 minutes.
- Stir in the cooked sausage and then spread the polenta into a cast iron pan.
- Cool in the fridge for 4 hours.
- Preheat oven to 400 degrees.
- Top the polenta with the crumbled blue cheese and diced fontina.
- Place in the oven and bake for roughly 30 minutes, until the polenta is heated through and bubbling.
- Rest for 5 minutes, garnish with chopped green onion and serve!
