Ingredients
- 4 Large – Sweet Potatoes

2 T – Olive Oil
- 12 oz – Bacon
-
3 t – Bacon Bomb
-
6 T – Butter
Directions
- Preheat smoker to 250 degrees.
- Poke the potatoes with a fork to vent and rub them with the oil.
- Place the potatoes on the smoker and cook for about 2 hours until they are soft and fork tender.
- While the potatoes are smoking, chop the bacon.
- Cook the bacon in a large skillet over medium high heat, stirring occasionally. Cook until well rendered.
- Strain the bacon from the bacon fat. Save the bacon fat for other recipes or uses!
- Once the potatoes are done, make a slit in the potatoes and pry them open. Scrape out the potatoes into a bowl and discard the skins.
- Add the butter and bacon bomb. Use a fork to mash and stir the potatoes.
- Stir in 75% of the cooked bacon.
- Plate and use remaining cooked bacon as a garnish.
