Yellow Onion, grated |
2 | Garlic Cloves |
2 tsp | Black Gold Garlic Pepper |
1 lb. | Ground Chicken |
1 | Egg, lightly beaten |
1/2 cup | Panko Breadcrumbs |
1/3 cup | Cotija or Parmesan Cheese, grated |
2 T | Cilantro, chopped |
1 T | Parsley, chopped |
1 cup | Bee Sting Honey Chipotle |
1/3 cup | Chicken Stock |
Instructions:
- Preheat oven to 375 F.
- Heat ½ tablespoon of olive oil in a small saucepan over medium-low heat. Add onion and garlic and sauté for 2 minutes, until fragrant. Remove from heat, stir in Black Gold, and set aside to cool.
- In a mixing bowl, add ground chicken, egg, breadcrumbs, cotija, cilantro, and parsley. Gently mix, then incorporate cooled onion and garlic. Form the ground chicken into golf ball–sized balls.
- Heat remaining oil in the skillet, then lightly brown the meatballs on both sides. Transfer to a sheet tray, then bake in the oven for 15 to 18 minutes, rotating half way through.
- Meanwhile, add Bee Sting and chicken stock into the saucepan. Whisk to combine, then allow to simmer while meatballs are in the oven. When meatballs are finished baking add to the sauce, stir to coat, then transfer to a serving dish. Garnish with additional cilantro, if desired. Serve warm.
